Dear Dr. BBQ,

I am a big fan of your book and I use a lot of your rib recipes. Currently I have been using the smoking box in my Weber grill to smoke ribs, but I feel I need to invest in a smoker. Can you recommend two or three in the $400-500 range? And one to absolutely avoid. I saw the Bradley smoker today and it seems useful but looks like the easy way out instead of enjoying really smoking the food. Thanks.

Hi Barry,

I like the Bradley smoker, it’s pretty simple. Similarly is the Cookshack Smokette. Both use electric heat. I like the Weber Smoky Mountain charcoal smoker. It’s around $250 and works great. A similar charcoal and wood smoker is made by a company called Backwoods, although the model that fits your budget is kind of small. I would avoid the low end offset cookers. They look real macho but don’t cook as well as the uprights in that price range.
