Q: Hi Dr BBQ:

 

I have been having the hardest time finding pimento wood chips (or pimento wood would be better).  I am famous for my jerk cooking but lack the authenticity of real pimento wood.  Any suggestions?

A: Hello Rob:

 

No wonder you have been having difficulty finding pimento wood–I just don’t think it’s exported because the Jamaicans need all they can get for their own jerk grilling. I have done extensive Web searches and cannot locate a source.  When I was last in Jamaica, a few years ago, everyone told me that pimento wood was in short demand.  Substitute the fresh branches of any fruit tree, such as apple, pecan, or peach, and you will have a reasonable facsimile.
