OK, I am 53 and have been smoking my meats since I left home when I was 19. My father always used wet chips back then to smoke chicken on a spit. Anyway, I have always used oak or hickory. Now I hear people talking about apple wood? Is this any apple tree wood or is this something else? Do the differant types of apple trees give you a differant taste? Cherry trees, the same question. Also, the hickory & oak I use, I buy at the store in chunks. Can I use any old hickory or oak wood that I can get off my land? One more thing, is there any bad wood to use? I have friends, kids and grand kids that I have out all the time and I would not like to get them sick.
Any kind of fruit wood is great for smoking. Bad woods are pine, mesquite (but you can grill with it), fir, wood scraps, plywood, sumac. You can also smoke over pecan and the wood from other nut trees.
