Dave,
I’ve come up with a couple of hot sauces that friends and family think are really good and that I should sell. I’ve been trying to find out what’s actually involved with bottling sauces to be sold. I’d be concerned about anyone getting sick, etc. Eventually, I’d really like to grow my garden and be able to make enough to sell at stores like Peppers.com, etc. The folks at Peppers recommended I email you and also suggested your Too Many Chiles book which I’ve already ordered. Any information would be of great help, and if you help get me started, be assured that you’ll get a bottle of my first batch!
Thanks in advance.

Mark:
Let’s do this in two steps. First, go to
www.fiery-foods.com  and click on "E-Zines" on the top navigation bar. Then click on "The College of Chile Knowledge" and start reading the articles. This is a crash course in the questions you ask. After you have read the appropriate articles, ask me additional questions. Generally speaking, it would be difficult to achieve your dream unless you are an expert farmer, food manufacturer, and marketer all rolled into one. My advice always is: choose one of these disciplines and perfect it. The best one to perfect is marketing, because sales drives all business, and let someone else grow the peppers and pack your sauce.
Good luck.
–Dave
