Q: Hi Dave,

What peppers are used in clear hot sauces? Where to purchase and will they grow in the U.S.A.?

A: Hello Pam:

This is an excellent question. I haven’t looked at the ingredients label on a bottle of the clear sauces, but I’m betting it’s some form of oleoresin capsicum, which is an extract. It would be added in very small amounts so that the color would not show. Also a possibility is chile juice, made when chiles are run through a juicer. If you used, say yellow wax hot chiles that are very pale, you would have a clear juice to add vinegar to. All peppers can be grown in the U.S.A., and your local produce market probably has Yellow Wax Hots.
