Hey Dave,

I Love your website by the way. I like to grow my own jalapeno peppers at home in my garden. I usually do very well but I was wondering why do a few of my peppers get brownish colored cracks on the outer skins of the pepper. Some don’t even get to full size before this happens. What can I do to prevent this from happening in the future?

Hello Rich:

That is called "corking" and to Mexicans it is a good thing as it a sign of authenticity. It is genetic and there is nothing that you can do about it. Corking does not alter the flavor or the heat of the pods.
