Q: Hi Dr. BBQ:

 

I’m looking for an “awesome” recipe for grilled lamb and/or lamb chops.  My husband loves lamb, and I would like to surprise him this weekend…he’s been away for 10 days.  The only problem, I’ve tried many recipes and none have that “Oh! Wow!” taste.  Do you have a secret recipe that would melt in his mouth?

A:  Hi Diane,

 

It’s not exactly a secret recipe but I love lamb chops too.  I especially like lots of garlic and thyme on my lamb so here”s what I”d do:

 

You will need to roast a head of garlic by cutting the top off, drizzling it with olive oil and roasting it in the oven for about a half hour at 350°F. Let it cool a bit and then squeeze all the garlic out. Mash the garlic in a bowl with some salt. Then add some olive oil, black pepper and thyme. Mix it all up good and smear it all over the lamb chops. Do all this the night before. When it”s time to cook, just grill the chops over medium heat until they are still a little pink inside.  I”d serve it with roasted garlic mashed potatoes too.
