Q:  Dr. BBQ,

 

Are there any tricks to keeping leftover barbeque and reheating it? Every time I try, it seems to dry out.

A:  Hi Denise,

 

Try to keep the meat as fresh as possible by wrapping or putting it in a Ziploc bag as soon as possible. I reheat small portions in a microwave on med-hi or cover a pan of larger portions in the oven at 325°F. If you need to moisten pork, I use a 50/50 mix of apple juice and barbeque sauce. For beef, I use a 50/50 mix of beef broth and barbeque sauce. Another option that works well is a vacuum sealer. You can reheat leftovers right in the bag by placing them in boiling water.
