Q:   Hi Dr. BBQ:

 

A friend of mine told me that if I added liquid smoke to my marinade that my pork chops would taste smoky after grilling.  Is he right?

A:  Hi James,

 

Well yes he actually is right. Liquid smoke is a by-product of the charcoal making process so it is actually a natural smoke flavoring.  It is very common in commercial BBQ products.  It”s very strong and can overpower a marinade or BBQ sauce and make it bitter, so use it very sparingly and remember that it won”t ever match that great wood smoked flavor that we get from grilling and smoking.
