Q:  Hey Dr. BBQ,

 

I hear a lot of people debating whether to put BBQ sauce on brisket or not. What do you think?

A:  Hi Jim,

 

My preference with all barbeque is to serve the sauce warm and on the side as a condiment. I personally would use very little, if any, as long as the BBQ was good. Now after saying that, I have to tell you that I serve brisket with sauce on it on a regular basis. There are two reasons:  The first one is that brisket dries out quickly after slicing, so if you need to hold it you have to do something (I usually use a 50/50 mixture of beef broth and BBQ sauce for this); the second reason is that most people like BBQ sauce and expect it with their food. Now I know there are hardcore places in the BBQ belt where sauce is a bad word, but my experience tells me that those places are few and far between.
