Dave,
I have been buying peppers for my business (infused oils and vinegars) from Janie at Chile Plants in Jersey. I am thinking about doing some infused vodka and wondered if you had any info or a lead as to what pepper makes the best infused vodka. I have used many peppers to infuse my vinegar’s over the years and can say unequivocally that any habanero makes the best pepper sauce there is. Last year I used Red Fresnos in vodka and I did not get any complaints and no one died. Janie of chileplants.com is sending me some of her exotics like Tennessee Teardrops, Orange Teapots, Red Dominicas and others. I also am getting some of the Trinidad Perfumes which might make interesting drinking with the taste of habs and no heat. Anyway, I enjoy your newsletter immensely. I go way back with you all ( I won a Scovie before they were called Scovies). I hope to make Albuquerque next year as a vendor and appreciate any help in picking the appropriate pepper for infusion in vodka you might send my way.
Respectfully,
Rus

Hello Rus:
I would try anchos. They have a wonderful raisiny flavor profile and low heat. Thanks for your kind words and hope to see you in March.
