Chile Crispness Lost In Freezer

Q: Dave:

I started growing my own hot peppers last year and the crop came out great. The problem is, I like to enjoy the peppers year round. I used a vacuum packing machine to store the peppers in the freezer, but when I thawed them they were very mushy.  They’re good to cook with but I like them crisper. Is it better to just store them in the freezer in a Ziploc bag as is? Do you have any ideas for storing them for the winter to keep them as close to fresh-picked as possible?

A: Hello David:

In the freezer, ice crystals from moisture in the pods themselves rupture the cell walls in the pod, causing them to lose their crispness.  Unfortunately, there is no cure for this, no matter how you pack them.
