Making Chipotles in a Smoker

Q:  Dear Dave,

I have just bought a CookShack Smokette oven.  I absolutely love chipotles, but, living in England, they are not easy to find and are expensive.  Can you recommend a process for making chipotles in this oven?  I can get a form of jalapeño here, albeit grown in Africa!

A:  Hello Brian:

The easiest and quickest method for making chipotles in a smoker oven such as this is to slice the pods in half lengthwise to expose more surface area to the smoke and heat.  Smoke the pods over low heat, about 212 degrees F (100 degrees C) until the pods are

desiccated.  If you are going to make powder, you must smoke the pods until they are brittle and will snap in half.
