I am a great fan of you and your books. I need resources for pepper processing equipment and requirements for the processing/bottling process. I intend to open a hot shop in Texas and sell many brands of sauce. I do not need equipment designed for producing huge quantities to start, I can expand later if my sauces become a hit. Is there a processor or co-packer in Texas (Houston, San Antonio or Austin areas) you could reccommend to produce my sauce for me?
Don’t even _think_ about bottling your own sauce. This is way too labor and expense intensive, and you would have to go to school and be certified. Use a contract packer like Los Tios in Houston, 888-345-tios.
