I just found your website while searching for a way to smoke jalapeño chiles to make chipotle. While I will investigate your website, I am trying to figure out how to use a Cameron stovetop smoker. It sits on two stovetop burners and uses finely shaved wood chips.
It takes a long time to smoke jalapenos and I certainly wouldn’t try it indoors. In fact, with chipotles so readily available, it just doesn’t add up to spend the time and the fuel to smoke them yourself. If you’re still determined to do it, use an outdoor grill in indirect mode with charcoal and soaked wood chips. It is much easier to mostly dry them out in a food dehydrator and then smoke them.
