I’m going to manufacture a Brazilian hot sauce. Right now I’m using the Thai pepper but I’m looking for a pepper very popular in Brazil called "pimenta malagueta." Do you know if this pepper is available here in USA? Also, do you know any device to destemming peppers? Thanks for any help!
I have grown malaguetas. I doubt that anyone grows them commercially in the United States. My Google search for "pepper destemmer" yielded nothing. Would a grape destemmer work? See http://www.beer-wine.com/details/bar3002.htm
