I have been growing jalapenos to smoke for cooking later. While I have several peppers on my plants now, there is not enough to justify firing up the smoker. My plants have definitely slowed down production because of the peppers already on them. Is there a way I can harvest and store the peppers for 3-4 weeks until I (hopefully) have enough additional peppers to smoke? Thanks.

Hello Sheryl:

Jalapenos are usually smoked after they turn red. Since texture won’t be a consideration, you can freeze them until ready for smoking. Here’s a hint. Smoking is a long and tedious process. It goes much faster if you cut the pods in half lengthwise and place them in a dehydrator first. This will reduce the amount of smoking time necessary.
