Q:  Dear Dr. BBQ:

 

I want to try to go back to the basics and grill over wood. I have oak and apple wood available to do this but have no earthly idea how to do it.  Help!

A:  Hi Susan,

 

Grilling with wood can be fun, and the taste is like no other. You”ll need a sturdy grill that can take the heat and you”ll probably want to cook something that will be done quick, like a steak, chops or burgers. Just burn some wood until you have a nice bed of red-hot coals built up. Then make sure you add a good amount of fresh wood before starting so you”re fire will stay hot. Oak and apple are both great choices. Stay away from any soft woods like line or fir.
