Q. Hey Dr. BBQ,

 

I was told to use apple wood for smoking a ham. I am brining a whole pork leg and it will be ready to smoke next Sunday. Do you recommend I use the apple wood or do you have another suggestion? When are you going to make another appearance on BBQ All-Stars? Thanks for the tips.

A. Hi Sean,

Apple wood is a good choice, so is cherry, and a little bit of hickory or maple would be ok too. Just don’t use too much of whichever you choose.  As for The All-Star BBQ Showdown, they are negotiating a new season and I hope to be included again. Keep your fingers crossed.
