Dear Dr. BBQ:

The other day I soaked some hickory wood chips in apple juice for a day, then used a small smoker box in my gas grill. This is the first time I used apple juice instead of water. I smoked chicken legs, and noticed they had a sheen on them, and turned out great. Is it possible the sheen was a result of the apple juice? Perhaps the sugars from the juice, or was it just my imagination? I’ve been looking and have been unable to find the answer. Thanks,

Hi Jnibori,

In my experience soaking the chips in apple juice or anything else besides water won’t actually affect the food, but if it worked for you, go for it!
