Q. Dr. BBQ:

Hello, My name is Rolf Persson and I am a chef here in Markaryd in South Sweden. I am working with BBQ smokers and catering and am very interested in learning more to develop my skills. I hope that maybe you can give me some tips. It would be nice to go to USA and see how you work “over there.” Can you tell me something about where to go and what to see? When is the best time to go? Especially nearby Houston, Texas, since I have been in contact with BBQ pits by Klose and would like to go and visit them. I can also tell you that I am part in a small company that produces pits. You can have a look at our homepage http://bbqequipment.se/ I look forward to hear from you. Yours,

Rolf Persson

A. Hi Rolf,

I think David Klose will be a great resource for you. You might consider going during the Houston Livestock Show and Rodeo. They have a huge cookoff there. It’s in late February. Dave should have the details. You might consider buying my BBQ cookbook. It’s called Dr. BBQ’s Big-Time Barbecue Cookbook, and is available through Amazon.com  Your cookers look very good. I like the Big Green Egg. www.biggreenegg.com There is a distributor in Amsterdam. Take a look at my website too www.drbbq.com  Great to meet you,

Ray
