Hi Clint,

I personally buy most of my meat at the large wholesale clubs and I know many of my fellow competitors do as well. In many areas the clubs don’t carry whole briskets though, so we are forced to go elsewhere, but often we will buck up for a premium product in the brisket category anyway. In this case a meat wholesaler is what I look for. They may make you buy a case of 5-7 but the quality and savings usually make it worth the trouble. Try to split it with a friend and if not they freeze pretty well. Chicken is a little different. I like to buy my chicken as late as possible so I usually get it at the local grocery store. Look at the dates for the freshest packages and you might want to look for chicken that hasn’t been “enhanced with a solution.”
