Q: Dr. BBQ:

 

I love the book and have recommended it to several friends. I live in Wheaton, and can remember you here in Chicagoland long before you were a bigtime celeb. Anyway, your recipe in the book for the basic Big Time Rub, are you absolutely sure about the amount of chili powder?  I made it last night and the chili powder was overpowering (not in heat but in flavor). Please check for me. Thanks.

Thanks for the nice words. “Bigtime celeb” might be a little much, but I’m having a blast. I do miss Chicago, but I’m now at home in Florida for the winter.  I won’t miss Chicago for a few months anyway.  In my recipes I try to use the most basic of ingredients, unless otherwise called for. I figure that’s what most people are going to have. So for that rub I use chili powder that I buy in a big plastic jar from Sam”s Club. If you use some higher quality chili powder you might need to use less. People’s tastes are different too, but that the recipe is correct.
