Q:  Dear Dr. BBQ:

 

I recently ate at Kreuz Market in Lockhart, Texas, and noticed a distinct lack of saucing of the finished meat.  Is their food barbecue or just smoked meat?  I know that this is a loaded question.

A:  Hi Stanton,

 

Yes, it sure is a loaded question. That is hardcore “No sauce” country down there.  There are some that will tell you that any smoked food is true barbecue, and that the sweet sauce is some plot by Northerners to ruin it. Others will tell you it’s just smoked food if it’s served with no sauce.  Here’s my thinking: If it’s brined or cured and then smoked at a low temp only for flavor then it’s smoked food. If it’s been cooked at a higher temp and is ready to be eaten when it comes out of the smoker I consider it barbecue.
