Q:  Dear Dr. BBQ,

 

Do you have any good side dish suggestions to serve with barbeque for a small gathering of five or six people?

A:  Hi Peter,

 

Beans and cole slaw are always good with barbeque. I like to serve the beans in a hollowed-out, roasted onion and the slaw in a hollowed-out pepper. Or try my cornbread casserole recipe that always goes well. Enjoy!

 

 

 

Bonesmokers Cornbread Casserole

 

1 1/4 cup cornmeal

 

1/2 teaspoon baking soda

 

1 teaspoon baking powder

 

1 teaspoon salt

 

1 stick butter, melted

 

1 cup milk

 

4 eggs, lightly beaten

 

2 cans creamed corn

 

 

 

Combine the dry ingredients, then add the butter, milk and eggs. Mix well and add corn. Mix well again and then pour into a greased pan. Bake at 350 degrees F for about an hour. Serve warm or at room temperature.
