Q:  Dear Dr. BBQ,

 

I have always been a fan of Southern-style BBQ, so much so that I want to start my own restaurant.  Please send info on commercial indoor cookers/smokers. I need to know such things as how much smoke they produce out of the chimney, what sort of fire hazard they present, price and what sort of stripped down version might be more economical to ship. Also any contacts that could advise me on recipes, cuts of meat, cooking times, etc.

A:  Hi Brett,

 

There are three primary commercial BBQ cookers here in the U.S. They are Cookshack, Ole Hickory and Southern Pride. Cookshack has cookers that are electric and wood-pellet fueled. The other two are gas-fueled with some wood for flavor. All are well respected and have been around for a while. You should contact them directly. Here are their websites:
