Hi There Dr.BBQ,

I’m really trying to get better at this but my biggest thing is everything seems to have the same flavor. No matter what I try I can tast the different rubs that I put on but all seem to have that same taste to them. Could it be from the charcoal I’m using?? I have been using Kingsford lump charcoal. I usually light up the charcoal and wait 45 minutes or so. Could you help, please?

Hi Jules,

Charcoal is certainly going to impart a distinct flavor on anything you cook on the grill, but you should be able to create different variations on that great taste with rubs and sauces. Try using a little heavier dose of the rubs and I think that will help. Also don”t be afraid to try different strong ingrdients in your rubs like herbs, citrus zest, and ground chiles. As for the Kingsford, it”s just fine. I was part of The Barbecue Championship Series, a made-for-TV cooking tournament that was sponsored by Kingsford and we found their products to be very good.
