Dr. BBQ,

I built a smoker out of two 55 gallon drums, one on top of the other. I’ve just started cooking in the last month and need a little help with a few things. At what temp do I cook pork loin and for how long? And what rubs do I use on it or do I use a marinade? And what else can I do to make this smoker cook better because I threw this one together in a day and I’m going to build a bigger one soon. Thank you,

Hi Fester,

That’s a fine-looking cooker. I don’t know what problems you’re having but you might need another pipe going between the chambers. As for pork loin, I like to cook it at 300°F until it reaches an internal temp of 150°F. Then wrap it in foil and let it rest for 20 minutes before slicing. I don’t usually marinate but I always use a rub. Just mix a few things off the spice shelf until it tastes good. Salt pepper, garlic powder, chiles and a bit of sugar go pretty good on pork loin.
