Hello Dr. BBQ,

I have your cookbooks and love the recipes! My question is I have a side-mount smoker grill and it is hard to keep the temp at 220°F. Do you have any suggestions? your biggest Canadian fan,

Hi Chris,

If you read the books you know I’m not a fan of offset cookers for that reason. Heat rises and it’s hard to make it go sideways with an even flow. Charcoal is more predictable than wood and you can try sealing up the doors but unless it’s a heavy duty smoker you’ll always be fighting it. You can look around on the Internet and you may find some modifications specific to your cooker but again, it will only be a small help. The best answer is to sell that one to your neighbor and buy something that has the fire underneath the food.
