Dear Dr. BBQ:

We just bought a electric smoker. We put the chicken wings in a disposable aluminium pan. Should we we have used a aluminum pan and does that hurt the smoking process. We had just got done smoking sausage and took no time at all. we put the sausage right on the grates, but we didn’t with the chicken wings, because of the grease. it seems like it is taking longer then it should. they have been on there for over 2 hours and still a lot of liquid in the pans. did we do wrong by putting them in a tray. Thank you.

Hi Ronnie,
The pan will definitely slow things down and it will keep the food from getting much smoke flavor. You might want to try lining the bottom of the cooker with foil to help with cleanup and cook directly on the grates. As far as times and processes, all the electric smokers are a little different but you should have some good info in the owners manual.
