Storing Chiles in Alcohol

Hi Dave,
My UK crops of ’Hot Wax’, ’Jalapeno’, ’Red Savina’ and ’Chocolate Habaneros’ are all doing wonderful now that the weather has improved. I think I love my plants more than my wife. Is this normal? Seriously though, you mention preserving in Alcohol. Can the alcohol be diluted? I bought some tequila with the intention of making some sauces with it but I don’t have the courage to try it just yet. It isn’t a big bottle so I wondered whether it could be diluted with something to just preserve some peppers. I’ve also got some expensive vodka.

Since I haven’t met your wife, it’s difficult to say. Because liquor is already diluted, I wouldn’t dilute it any more (80 proof is 40 percent alcohol). Also, don’t waste the good liquor–use the cheap stuff.
