Although I am not new to gardening, I am new to growing Chiles. I have an abundance of Jalapenos harvested. I can not find a recipe for canning or preserving the pods short of pickling them in vinegar. Since I am sensitive to vinegar, I am looking for another way. Any help would be appreciated.
The easiest way to preserve them is to cut them in half lengthwise, remove the seeds, double bag them and place them in the freezer. They will last about a year. You also can smoke them after they turn red and made chipotles (see here).
