Hello Dave:

Nice website! I’m going to explore it the next week or so. My wife and I are growing 2 ancho plants this summer in Atlanta GA. There are many nice, green peppers on the plant right now. Are you saying that anchos ought not be harvested until they turn red? Thank you,

Hello Steve:

By definition, anchos are dried red poblanos. If harvested green, they are poblanos and can be used as green chile–made into sauces, stuffed, etc.
