- 2 tablespoons dried sumac seeds
- 1 tablespoon powdered dried thyme
- 1 teaspoon cayenne

Dry-roast the sesame seeds in a dry skillet over medium heat for a few minutes, stirring frequently. Allow to cool, then mix with the sumac, thyme, and cayenne.
