Right Temp for Ribs

Hey Doc:

I’m kinda new to the whole smoking communtiy, but I”ve been grillin’ for a long time. I bought a Char-Broil grill/smoker from with the small smoke box on the side, and I recently tried to smoke ribs but they cooked too fast. I think the temp of 250 that I was told I needed was wrong. What is the right temp for ribs? And have you ever injected a marinade into a ham for smoking?

Hi Jerry,

I think 250 is a good temp for ribs. You’ll need to measure the temp at the grate though, because it will be different than the temp gauge reading on a cooker like that.  I smoke hams pretty often. I like to brush a little BBQ sauce on at the end. I’ve never injected one but it should be good. Just be sure to go light on the salt in your injection because the ham is already cured and probably well salted.
