Sizing a Firebox

Dr. BBQ:

I’m building a portable smoker and need to know how big my firebox should be. The grill its self is a 350 gal.(6ft. x 3ft.) round tank. What do you suggest?

Hi Stephen,

I’m not an expert on this but luckily for us all I have a friend who is. I asked the one and only Dave Klose, who makes the finest offset BBQ Pits you’ll find anywhere, to help us out. Here’s his reply: “Firebox should be at least 26 inch by 26 inch up to 28 x 28 inch (round or square firebox). This will allow for ample room for draft control. I would suggest the thickest steel for the firebox you can find. One-half inch is very nice for this. Be sure to put large air vents in the door for that purpose. Elevate your fire rack about 3 or 4 inches off the bottom of firebox for the same reason. All this will work together to ensure a proper cooking main chamber with durability & strength.” –Dave Klose
