Hey Doc!

I am planning to open a barbeque restaurant/catering business and need to purchase a mobile smoker that will handle a 50 seat restaurant and up to 200 at events. Any insights would be greatly appreciated! Thanks!!

Hi Craig,

My advice is to buy something that is true commercial equipment. Look for the sticker that says NSF Certified. See www.nsf.org  This will assure you that the health inspector will approve it and it will be easy to clean and maintain. It will also mean you’ve bought a good quality cooker that will perform under heavy use for many years. The ones that I’d look at are Cookshack, Old Hickory and Southern Pride. Best of luck to you.
