Hi Dr. BBQ:

First of all I would like to say I love your books, please keep them coming. I own a BBQ joint in Alabama. I have a non-working walk-in cooler that I purchased awhile back. I have seen a smokehouse that was made from one somewhere but I can’t recall where I saw it. Have you seen any such smokehouse in your travels and if so, where? I would like to see how it was designed so I can build one. Oh yeah, I have got to have a chefs jacket like the one you are wearing on your homepage. The white one with flames, where might I get one? Thanks for the nice words. Another book is on the way for 2008. It’s The NFL Game Day Cookbook. As for the smokehouse, try looking at sausage making sites on the Web like sausagemaker.com or alliedkenco.com and I think you’ll find what you are looking for. I’ve never done it but I think it can be done. I’d check with the health department and fire inspector before I spent any money though. The chef jacket is an easy answer. They come from culinaryclassics.com in Chicago. I’ve been buying from them for years and they are the best. They’ll make anything you want and the prices are fair.
