Hi Dr. BBQ:

My mother-in-law wants me to smoke a prime rib on my Big Green Egg for Christmas. I am still a bit of a novice and would hate to ruin it. Any tips on an easy, foolproof recipe? Thanks.

Hi Myron,

I can’t promise this as foolproof, but it’ll give you a pretty good chance at being the hero. Buy a USDA graded Choice boneless rib eye roast. Figure a pound per guest. Splash some Worcestershire sauce on the roast, and refrigerate it overnight. Season it heavily with a Montreal-type steak seasoning. You should be able to get that at any grocery store. Let the roast sit on the counter to warm up for one hour. Prepare your Egg for indirect cooking at about 325 F. Cook the roast to an internal temp of 125 F. for medium rare. Remove it to a platter, tent with foil and rest for 20 minutes. Hope your mother-in-law likes it.
