Dear Dr. BBQ:

I have a 10 lb. suckling pig and I have never grilled a pig before. I am thinking of grilling over coals, is this a good thing to do? Will I undercook the inside and burn the skin? Thanks, Danny

Hi Danny,

If you can cover the grill and keep the coals from burning too hot it will be a good way to cook that little hog.

I’d try to cook it at 250 degrees so that it gets done inside. The internal temp needs to be 160 all over.

I’d guesstimate that it will take 4-5 hours.
