Venison loin is very lean with almost no fat. Just don’t overcook it. Medium rare at the most. I’d use a little BBQ rub and cook it hot and fast.
P.S. from Dave: You can also use the technique known as larding. Cut little slits into the loin and stuff them with bacon fat. This will make the meat juicier and more flavorful.
